The NAC’s mandate has always been to nurture and support a diverse assemblage of performing artists from across Canada.
We’re proud to present the Resident Chef program, with the intention of creating a “stage” for Canada’s most promising culinary artists.
Chefs from every region of Canada will be invited to demonstrate their artistry and vision of what Canadian cuisine can be, and to share their knowledge and culinary innovation through educational outreach here in Ottawa as well as online, providing access to all Canadians.
This will be accomplished with every Resident Chef through a ticketed culinary event featuring a menu designed in collaboration with NAC Head Chef, Kenton Leier, reflected in an ongoing menu in 1 Elgin, as well as a series of appearances, demonstrations and classes held in the Ottawa area and shared with the rest of Canada.

Originally from Jacmel, Haiti, Paul Toussaint moved to Canada at 20 to study law, but quickly realized he wasn’t an “office guy”. He soon discovered a passion for the world of fine dining and got a job at Toqué!, a globally recognized restaurant where he honed his culinary skills.
After contributing to post-earthquake reconstruction efforts in Haiti, Chef Paul took on the role of executive chef at Agrikol in Montreal. He crafted menus highlighting Haitian cuisine for their guests, and those of his Paul Toussaint kiosk in the TimeOut Market. By blending Caribbean influences, he also crafted a distinctive culinary experience at Kamúy restaurant and the TimeOut kiosk – Americas BBQ. In May 2022, he collaborated with Biergarten Belle Gueule and Aux Quartiers Belle Gueule pub as the executive chef for a culinary experience on one of the city’s finest terraces. The following summer, he was part of the chef team preparing meals for musicians at festivals like Osheaga, îLESONIQ, and Lasso.
Named Eater Montreal’s Chef of the Year 2021 and featured in Canada’s 100 Best in 2020, Paul channels all his resources to support local charitable causes, including Mission Bon Accueil and Artists for Peace and Justice.
A devoted art collector, Chef Toussaint passionately advocates for Caribbean artists. Transforming Kamúy into an open-air art gallery, he carefully integrates music into the Caribbean experience. He weaves a vibrant connection celebrating Caribbean culture and culinary innovation.

Après un coup de main en Haïti à la suite du tremblement de terre, le chef Paul Toussaint prend les rênes du restaurant Agrikol, à Montréal. Dans ses menus, il fait découvrir aux convives toute la richesse de la cuisine haïtienne. Ses plats sont également disponibles à son restaurant-comptoir au marché TimeOut à Montréal. Ambassadeur de la cuisine caribéenne, il propose une expérience culinaire des plus savoureuses au restaurant Kamúy et au comptoir Americas BBQ du marché TimeOut. Chef Siobhan Detkavich first stepped into the kitchen at the age of 16 and is no stranger to its many challenges. While all paths to culinary mastery are fraught with considerable demands, her experiences facing racism and sexism throughout her career have enticed her to defy the odds and show that perseverance, hard work, and dedication can be exemplified at any age.
Having trained under renowned chefs throughout her career, at the age of 21, Detkavich found herself competing for the title of Top Chef Canada; making history as the youngest and first Indigenous woman to ever compete.
She has since made her debut hosting her own television series, Dine Your Sign, and uses the spotlight to speak of the importance of reconciliation while honoring her Indigenous heritage.
In January 2023, Chef Detkavich in partnership with The Ballantyne Project, will be launching a first-of-its-kind project to establish food banks in Indigenous communities in BC, giving them access to fresh, healthy foods at no cost and food education in support of promoting a healthy lifestyle.
“We will be working within the communities to strengthen our relationships and create opportunities for indigenous youth” she says, “We’re so excited to be working alongside incredible people to help us with this journey!”
La cheffe Siobhan Detkavich fait ses premiers pas en cuisine à l’âge de 16 ans, un monde rempli de défis qui ne lui sont pas inconnus. Métier exigeant, il n’est pas facile de se frayer une place dans la gastronomie. Malgré le racisme et le sexisme ambiant, elle réussit contre toute attente à déjouer le destin et montre que la persévérance, l’assiduité et la rigueur finissent par payer, peu importe l’âge.
Formée par des chefs de renom, Siobhan Detkavich décide à l’âge de 21 ans de tenter sa chance à l’émission Top Chef Canada, devenant la plus jeune et la première femme autochtone de toute l’histoire du concours.
Après son passage à l’émission, elle lance sa propre série télévisée, Dine Your Sign, et se sert de sa notoriété pour sensibiliser à l’importance de la réconciliation, tout en mettant à l’honneur ses racines autochtones.
En collaboration avec The Ballantyne Project, la cheffe Detkavich lancera en janvier 2023 un projet unique en son genre : ouvrir des banques alimentaires dans les communautés autochtones de la Colombie-Britannique pour offrir gratuitement à la population des denrées alimentaires fraiches et saines et un programme d’éducation alimentaire encourageant l’adoption de saines habitudes de vie.

Originally from North Vancouver, Chef Carmen Ingham is passionate about showing off the ingredients that represent coastal British Columbia. His focus on locally-inspired cuisine is a perfect match for his current position as Executive Chef at the Wickaninnish Inn’s The Pointe Restaurant (Tofino, B.C.), a Relais & Chateaux property that celebrates the bounty and beauty of the area.
A graduate of Vancouver Community College’s culinary program, he has since gained 14 years of professional experience in some of British Columbia’s most prestigious restaurants and resorts, including a Sous Chef position at Sonora Resort on Sonora Island, B.C., and Head Chef at the award-winning Olo Restaurant in Victoria, B.C.
Chef Ingham’s talent was recognized early in his career. He placed second in the first annual Hawksworth Young Chef Scholarship, a Canada-wide cooking competition for chefs under 28 years old, in 2013, and was recognized as the “Le Creuset Rising Star” at the same event. In 2016, he was one of the top ten young chefs in Canada at San Pellegrino Young Chef competition. Most recently he was awarded Second place in the Garland Chef Challenge and the PEI International Shellfish Festival.
Constantly seeking to expand his skills, Chef Ingham has travelled across B.C., to Washington, California, Japan and Italy to volunteer at farms and assist staging in a diverse range of culinary environments. This hands-on and from-the-ground work with ingredients was “an enlightening experience,” he says, and highly influential in his approach to respecting the produce he uses.
From casual to fine dining, butchery to pastry, Chef Ingham brings a broad array of professional expertise to his position as Executive Chef at The Pointe Restaurant.

La-toya Fagon is the executive chef and owner of Twist Catering.
Born in Canada of Jamaican descent, she grew up cooking and eating “island foods,” and fell in love with creating these dishes at a young age. After graduating from George Brown’s Culinary Arts program, she continued to train at top restaurants and hotels throughout Toronto, Europe, and Mexico.
Having gained years of experience, La-toya’s creativity flourished and she began to fuse her traditional Caribbean ingredients and culinary style with Mediterranean flavours. This brought a taste of something new to the familiarity of home-style, soulful goodness. After months of experimentation, determination, and hard work, La-toya tapped into her entrepreneurial spirit and Twist Catering was created.

Chef La-toya’s drive for excellence and her knowledge of food, combined with her innovative spirit, has led to many ‘firsts’ for Twist Catering over the years. Twist was the first female black owned business hospitality partner for TIFF, and Chef La-toya was the first food expert on the Marilyn Denis Show in Toronto, and personal chef to the Toronto Raptors.
And, as evidenced by her many television appearances, Chef La-toya’s creativity, entertaining personality, and ability to engage audiences makes her a welcome presence wherever she is.

Never bound by titles or labels, Charlotte Langley is constantly reinventing herself and what it means to be a chef, culinary curator, entrepreneur, ambassador for sustainability and champion of the people and causes she believes in.
Hailing from PEI, Charlotte embodies what her peers often call “Maritime Chic” – a love for honest food shared with warmth, charm and that famed East Coast hospitality that has chefs, farmers, restaurants, collaborators and clients across provinces and borders knocking on her door.
Over 20 years of honing her expertise working with and elevating seafood has taken her through some of the country’s most recognized restaurants (C Restaurant, Whalesbone, Catch, Rodney’s Catering) and in 2014, led her to create Canada’s most trusted seafood brand, Scout Canning.
Since then, she has expanded her repertoire with Scout Events, A Culinary experience org, judging culinary competitions, being featured on TV and in multiple print articles, participating in speaking panels and, in 2017, becoming Ambassador for the Marine Stewardship Council (MSC). It is in this role that Charlotte helps educate about the importance of caring for the oceans that provide for and feed millions and inspire chefs and consumers alike to choose certified sustainable and traceable seafood.

Jenni Lessard is a Métis chef, recipe developer and the Indigenous culinary consultant for Wanuskewin Heritage Park. She lives on Treaty Four Territory in the Qu’Appelle Valley in Saskatchewan, where she draws inspiration from the land. Raised near La Ronge, SK, by a small lake, Jenni’s earliest memories include visiting trap lines, picking berries and finding ways to cook and bake with ingredients from the boreal forest.
Her first food venture, at age 14, was a burger truck called Flight Delight at the local airport.
In 2005, Jenni opened New Ground Café in the small farming community of Birch Hills, SK, with no formal culinary training. It soon became a local foods “must visit,” with live music, art and a daily changing chalkboard menu.
Jenni moved to Saskatoon in 2012 to start Chef Jenni Cuisine. From weddings to mountain bike races, Jenni travelled the province telling stories about the producers and ingredients featured in her unique and nourishing menus.
In 2019 she was approached by Wanuskewin to create the culinary portion of the Han Wi dinner series, an immersive cultural evening set atop the Opimihaw Valley.
Through her company, Inspired By Nature Culinary Consulting, Jenni continues to honour her heritage and the land by continuing to learn and give back to her community.

Lessard rend toujours hommage à son patrimoine et au terroir par l’entremise de son entreprise Inspired By Nature Culinary Consulting; elle continue à apprendre et à redonner à sa communauté.
Membre du comité directeur de Slow Food Saskatoon, Jenni Lessard est secrétaire de l’Association culinaire autochtone du Canada et vice-présidente de la section locale métisse 126 de cette dernière.
Chef Minette Lotz’s passion is for terroir-driven and locally-sourced ingredients. An avid forager, Minette finds her inspiration from exploring her surroundings and discovering new flavour combinations. A firm believer in what grows together, goes together, Minette creates dishes that are true to the exact time, place, and season they are created in.
Chef Stacy Johnston believes that the ingredients make the dish. Growing up on her grandparents’ homestead ingrained in Stacy a deep appreciation for excellent farming practices. Focusing on her food system ‘from the ground up’, Stacy strives to create food that tells the story of the ingredients, their farmers, and the season.
In 2013, Minette and Stacy met in the kitchen. Their combined passion saw them cooking across western Canada, including working with Oceanwise and opening farm-to-table restaurants.
In 2020, Minette and Stacy helped open the Naramata Inn, a terroir-driven dining experience in the heart of BC’s Okanagan Valley.

Pour la chef Stacy Johnston, ce sont les ingrédients qui font le plat. Ayant grandi sur la ferme de ses grands-parents, Stacy a appris à apprécier les bonnes pratiques agricoles. En se concentrant sur son système alimentaire qui part des racines, Stacy s’efforce de créer des mets qui racontent l’histoire des ingrédients, de leurs agriculteurs et de la saison.
En 2013, Minette et Stacy se sont rencontrées dans une cuisine. Leur passion combinée les a vues cuisiner à travers l’ouest du Canada, notamment en travaillant avec Oceanwise et en ouvrant des restaurants de la ferme à la fourchette.

Sabrina Lemay is from Shawinigan and, from a very young age, she knew she wanted to become a chef. Thanks to her determination, she has worked in establishments like Le Saint-Amour, La Tanière, Le Baluchon and Les Sales Gosses.
Her adventurous soul pushes her to always look further and to go backpacking whenever the opportunity arises. Her experiences abroad inspire her cooking. She returns from each adventure with her head full of new ideas and develops recipes with local Quebec products. Her respect for nature is conveyed through her organic and colourful culinary creations. For Sabrina, restaurants are more than simply places to enjoy food; they are an extraordinary site of human exchange and connection. It is in this spirit and with a thirst for new culinary adventures that she continues to create gourmet, balanced menus as the current Chef at Bistro L’Orygine.
The cuisine at Bistro Orygine respects the same philosophy as the entirety of the Tanière Hospitality Group; to feature and showcase local products and ingredients sourced from Québec’s boreal landscape. Concurrent to this mission is the emphasis placed on the use of vegetables, and a prominent vegetarian and vegan offering, whether it be on the à la carte menu or the five-course tasting menu, which is offered in omnivorous, vegetarian and vegan interpretations every evening. This work philosophy demonstrates the inclusive and unifying spirit that Sabrina incarnates not only with her food, but with her team, her suppliers and the entirety of her entourage.

Pour Sabrina, les restaurants sont plus que de simples lieux de dégustation, ils sont source d’échange et de rencontre humaine extraordinaire. À présent Chef du bistro L’Orygine, c’est dans cet esprit et avec une soif de nouvelles aventures gustatives qu’elle continue à créer des menus gourmands et harmonieux.
La cuisine au Bistro l’Orygine cadre dans la même philosophie que l’entièreté du Groupe La Tanière, soit l’utilisation et la mise en valeur des produits de proximité et des ingrédients boréaux du terroir Québécois. Elle s’impose également le défi de mettre l’accent sur le légume, avec une imposante offre végétarienne et végétalienne, autant dans son menu à la carte que son menu découverte en cinq services, qui est décliné en version omnivore, végétarienne et végétalienne à tous les soirs. Cette philosophie de travail démontre l’esprit rassembleur et inclusif que Sabrina incarne non seulement dans sa nourriture, mais avec sa brigade, ses fournisseurs et son entourage également.
Christie Peters, chef-owner of Primal in Saskatoon (SK), has a passion for acquiring culinary expertise internationally and bringing it back to the prairies.
She first left home at 19 to enter the world of international modeling and, while living in Toronto, fell in love with the food scene. Working at Boston Pizza, she observed: “The power of the restaurant comes from the kitchen, so if I wanted to become a restaurateur, I would need to become a chef”.
Since her move to Vancouver, at 21, she has trained under several chefs and worked in the kitchens of De Kas in Amsterdam and Coi in San Francisco. In 2010, she opened her first restaurant, shortly followed by a second. Most recently, she completed a three-month internship at the world-famous Danish restaurant, Noma, under Chef René Redzepi.
As far-reaching as her quest for knowledge might be, her focus in her cuisine is on creating dishes that authentically represent the vast diversity of ingredients the Canadian prairies have to offer. Primal is known for creating dishes from locally grown Saskatchewan grains, using locally pastured meat and taking the idea of farm-to-table one step further by growing the produce they use in their own gardens. Every part of the vegetable is used, the compost goes back into the gardens, the leftover animal fat gets made into soap. The motto of her restaurant is “High Quality, Seasonal, Sustainable,” and these words are carried through every aspect of how the business is run.

Primal est l’incarnation de l’esprit de la ferme à la table, utilisant des céréales de la Saskatchewan cultivées localement, des viandes provenant de pâturages locaux, et des fruits et légumes poussés sur place. Chaque partie du légume est utilisée, le compost retourne dans les jardins et les restes de graisse animale sont transformés en savon. Acclaimed Chef Joseph Shawana is Odawa, part of the Three Fires Confederacy. Born and raised in Wikwemikong Unceded Indian Reserve located on Manitoulin Island in Ontario, Joseph was brought up knowing that food is life. Starting in the kitchen at the early age of 13, he learned from his mother, who had learned from hers, and quickly fell in love with authentic indigenous cuisine and the way it brings people together.
His classical French training and Aboriginal background combine to create authentic, Native American cuisine executed with world-class culinary technique; full of flavour and never compromising quality over quantity.
Currently, a professor and the Indigenous culinary advisor at Ontario’s Centennial College, Joseph is committed to furthering culinary education in all communities and providing hands-on experience to Indigenous youth by inviting them to work alongside chefs and learn valuable industry applications for sustained development.
As the force behind the high-end Indigenous restaurant, Kūkŭm Kitchen, which won the ‘Best World Cuisine” award in 2019, he was acclaimed for his unique experiments with traditional Indigenous ingredients, many of them wild, including fir tips, sweet-grass and seal.
Chef Shawana is currently the chair of ICAN, the Indigenous Culinary of Associated Nations. Under his leadership and guidance, ICAN is dedicated to breaking barriers and sharing Indigenous food, culinary and cultural experiences from across Canada with the world.
He was named on the list of Top Ten Chefs of Ontario and has received rave reviews in the New York Times, Toronto Star, the Globe and Mail, and Food & Wine, to name a few. He is also in great company on Air Canada’s top 20 restaurants in Canada for 2019 and is a sought-after voice on the emergence of Indigenous culinary around the globe.

Chef Renée Lavallée was born and raised in Shawville, QC. She left home at an early age to attend George Brown College in Toronto. After more than 20 crazy years in the business, including many stints in restaurants around the world, Renée has now called Dartmouth, Nova Scotia, home for 15 years.
After a brief hiatus to raise her family, Renée jumped back into the ring to open The Canteen. After fewer than three busy years, The Canteen opened up a brand new full-service restaurant and takeout shop called Little C only two blocks from its original location.
Renée has a long list of professional accolades, which include a first place in The Gold Medal Plates in 2014, and has been the spokesperson for a number of culinary brands and organizations, including Taste of Nova Scotia, Select Nova Scotia, Community Food Centres Canada and Dairy Farmers of Canada. Some may also recognize her from her appearance on Top Chef Canada in 2019.
Renée is an ardent supporter of local farmers, fishers and various other types of food producers. She can often be spotted at any number of local farmers’ markets with Doug, daughter Zoe and son Philippe in tow. We’re very excited she’s returned to share her award-winning vision of East Coast cuisine!
La chef Renée Lavallée est née et a grandi à Shawville, au Québec. Elle a quitté la maison à un jeune âge pour étudier au Collège George Brown, à Toronto. Après plus de 20 années folles dans le domaine de la restauration, comprenant plusieurs passages dans différents restaurants à travers le monde, Renée considère maintenant Dartmouth, en Nouvelle-Écosse, comme son chez-soi depuis 15 ans.
Après une courte pause pour élever sa famille, Renée s’est lancée à nouveau en ouvrant The Canteen. Après moins de trois années chargées, The Canteen a donné lieu à un tout nouveau restaurant avec service aux tables et repas pour emporter, Little C, à deux coins de rue de son emplacement original.
Renée a une longue liste de réalisations professionnelles, dont une première place aux Gold Medal Plates en 2014, et agit comme porte-parole pour plusieurs marques et organismes culinaires, notamment Taste of Nova Scotia, Select Nova Scotia, les Centres communautaires d’alimentation du Canada et les Producteurs laitiers du Canada. Chef Nick Benninger found his calling at the age of 16 working at a summer camp in northern Ontario. He fell in love with the kitchen and cooking and since then has “rooted” his career in many of the philosophies he learned in that first encounter with food service. After attending George Brown College, Nick completed his apprenticeship working at kitchens throughout Ontario and finally settling back down in his hometown of Kitchener-Waterloo.
In 2008, Nick opened Uptown 21 with his wife Natalie and, in 2013, the couple went on to open Taco Farm. Uptown 21 has been included in Where to Eat Canada every year since it opened, and recently Taco Farm was featured on the television show You Gotta Eat Here!
In 2016, Nick added two landmark restaurants, Marbles Restaurant and Harmony Lunch, to the portfolio of kitchens that he manages in uptown Waterloo. Having grown his brand to four establishments, it only made sense to create an umbrella company and, in 2017, Fat Sparrow Group was born.
In 2018, Fat Sparrow acquired the Stone Crock Group in St. Jacobs, which would increase the portfolio to six restaurants, a catering company, bakery, butcher shop, three market stalls and a wholesale food producer totalling 220 employees.
Nick has twice appeared on the Food Network, was recognized in Waterloo Region Record’s annual 40 under 40, and joined a local filmmaker to create a food show celebrating the 519 food scene called Nick and Taylor Make a Food Show!
An early adopter and leader in the local food movement, Nick is proud to showcase the cornucopia of great ingredients and produce found in the Waterloo Region.

With a love of cuisine that originated in Ottawa, while observing and absorbing her father’s passion for cooking, Chef Sheila Flaherty now brings us the experience of authentic inuksuit cuisine, (or Inuit food), from her home in Iqaluit.
Her roots in the North, however, are anything but recent. Her mother originates from Tuktoyaktuk in the Northwest Territories, and Chef Flaherty is committed to sharing her love for traditionally-made inuksuit with the rest of Canada and the world, as well as her innovative take on tradition and use of inuksiutit (country food) with the people of her community.
Chef Flaherty is both the first Inuk Chef to appear on MasterChef Canada, and the first to work collaboratively on the menu for Inuit Tapiriit Kanatami’s ‘A Taste of the Arctic’ here at the NAC. Her menus have also been featured in places like Nuuk, Greenland and New York City.
She is currently in the planning stage for a new business with her husband, called sijjakkut, which means “by the seashore”. The business will offer a tasting menu that will evoke lasting memories right in the heart of Inuit Nunangat, Inuit homeland, with one taste.
We’re thrilled that Chef Flaherty has agreed to join us to kick off the new season of Resident Chefs in September 2021, and to share a vision of modern inuksuit usually reserved for her northern community.
La passion culinaire de la chef Sheila Flaherty est née à Ottawa, en observant et absorbant l’amour de son père envers la nourriture. Aujourd’hui, chef Flaherty offre une expérience de cuisine inuksuit (inuite) authentique à partir de chez elle, à Iqaluit.
Ses racines nordiques sont loin d’être récentes, toutefois. Sa mère est originaire de Tuktoyaktuk, aux Territoires du Nord-Ouest, et la chef Flaherty est déterminée à partager son amour pour la cuisine inuksuit avec le reste du pays et du monde, ainsi que son approche innovatrice envers l’inuksiutit (nourriture paysanne) avec les gens de sa communauté.
Chef Flaherty est la première chef inuite à participer à MasterChef Canada, et la première à collaborer au menu de l’événement Le goût de l’Arctique organisé par Inuit Tapiriit Kanatami ici au CNA. Ses menus ont également été présentés à des endroits comme Nuuk, au Groenland, et New York.
Elle planifie présentement une nouvelle entreprise avec son mari, qui se nommera sijjakkut (sur le rivage). Cette entreprise offrira une table d’hôte qui évoquera des souvenirs durables au cœur du territoire inuit dès la première bouchée.
Nous sommes ravis que la chef Flaherty ait accepté de se joindre à nous pour lancer la nouvelle saison des chefs en résidence en septembre 2021 et partager sa vision de la cuisine inuksuit habituellement réservée pour sa communauté nordique.
Helena Loureiro is the Executive Chef and owner of Portus 360 and Restaurant Helena in Montreal.
Adopting Québec as her new home over 30 years ago, she warms the hearts of locals by sharing the culture of her native country; Portugal. Her modern and creative cuisine, directly inspired by her travels and her grandmother’s family recipes, have helped her create a reputation as one of Montreal’s top chefs.
A few years following the completion of her studies at l’Institut de Tourisme et d’Hôtellerie du Québec, her dream of opening her own restaurant was realized when Portus Calle opened its doors in the heart of Montreal’s Portuguese neighborhood.
In 2012, she opened her second restaurant on McGill Street, the Helena, which drew inspiration from the high ceilings and style of the breweries in Old Lisbon.
In the spring of 2016, the Portus Calle was reborn as Portus360 and moved the top of the “Tour de Ville”, a cultural beacon in Montreal.
Meticulous in her work, Helena uses only the finest quality ingredients, sourced locally and from Portugal. Energetic and devoted to her work, she is constantly on the lookout for new ideas, the perfection of her craft, and to learn continuously, despite the mastery of her art.

Born and raised in St. Albert, just outside Edmonton, Alberta, Chef Ryan Hotchkiss began his culinary career after high school and a move to Whistler, BC where he got his modest first taste of restaurant work, in the dish pit of a local eatery.
After working a few more restaurant jobs, both in front and back of house in Whistler, he made the move back to Edmonton to commence a more formal culinary education and to hone his skills in apprenticeships in established restaurants such as Il Pasticcio, The Sugarbowl, and Sage at the River Cree. He then took a job at Jack’s Grill, where he spent three years before moving on to Bar Bricco.
He is now the owner and Executive Chef of Bündok in Edmonton, AB, where he draws inspiration from seasonal, Canadian ingredients in a continuously evolving, sophisticated and beautifully presented menu.

Le chef Ryan Hotchkiss est né et a grandi à Saint-Albert, tout près d’Edmonton, en Alberta. Après l’école secondaire, il déménage à Whistler (C.-B.), où il fait son entrée dans le monde de la restauration comme plongeur dans un casse- croûte du coin.
Après avoir travaillé dans divers restaurants de Whistler, à l’accueil comme en cuisine, M. Hotchkiss retourne en Alberta et fait des études en arts culinaires à Edmonton. Pour affiner ses talents, il fait aussi plusieurs stages dans des restaurants réputés, tels Il Pasticcio, The Sugarbowl et Sage (River Cree Resort). Il œuvre ensuite pendant trois ans au Jack’s Grill, puis au Bar Bricco.
Ryan Hotchkiss est maintenant propriétaire et chef exécutif du restaurant Bündok d’Edmonton. Il propose à ses clients un menu sophistiqué, toujours en évolution, présenté avec raffinement, et qui privilégie les ingrédients canadiens de saison.

Now widely recognized as one of the finalists on Canada’s Top Chef (season 4), Rich Francis is redirecting the spotlight to issues of importance to him, namely the rights of Indigenous people to continue creating and serving food in a culturally authentic way.
Formally trained at Stratford Chefs School, he also learned much of the techniques he uses now in Moose Factory on James Bay and in Iqaluit NU, from people who still live off the land.
Now, as chef-owner of Seventh Fire Hospitality Group in Saskatoon, he creates authentically indigenous food and presents it, often as a private event out of necessity, to diners around the country. The hope is that, through sharing and enlightenment, people will see the importance of preserving the rights of Indigenous Chefs to hunt, prepare and serve food the way their ancestors did.
We’re very proud to have Chef Rich Francis work in collaboration with NAC Executive Chef Kenton Leier during his time here in September and look forward to seeing (and tasting) the results of their efforts!
Bien connu comme finaliste à l’émission Canada’s Top Chef (4e saison), Rich Francis braque maintenant les projecteurs sur les enjeux qui lui sont chers, notamment les droits des peuples autochtones de créer et servir des mets de façon culturellement authentique.
Formé à l’école des chefs de Stratford, il a également appris plusieurs des techniques qu’il utilise à ce jour à Moose Factory, aux abords de la Baie-James, et à Iqaluit, au Nunavut, des personnes qui puisent leur nourriture à même la terre.
Aujourd’hui chef propriétaire de Seventh Fire Hospitality Group, à Saskatoon, il crée des plats autochtones authentiques qu’il présente aux amateurs de partout au pays, souvent par nécessité dans des événements privés. Il espère que, par l’entremise du partage et de l’éducation, les gens verront l’importance de conserver les droits des chefs autochtones de chasser, préparer et servir la nourriture comme le faisaient leurs ancêtres.
Nous sommes très fiers d’accueillir le chef Rich Francis, qui travaillera en collaboration avec le chef exécutif du CNA, Kenton Leier, lors de son passage en septembre, et nous avons bien hâte de voir (et goûter!) le résultat de leurs efforts!
