Jenni Lessard, a Métis chef from the Qu’Appelle Valley, near Regina, Saskatchewan, is interviewed by the National Arts Centre's Michael Gauthier on her early entrepreneurial start in the food industry, connecting to her ancestors through food, and her current outlets for culinary creativity.
Chef Lessard was the Resident Chef at the NAC from September to November 2022.
Jenni Lessard is a Métis chef, recipe developer and the Indigenous culinary consultant for Wanuskewin Heritage Park. She lives on Treaty Four Territory in the Qu’Appelle Valley in Saskatchewan, where she draws inspiration from the land. Raised near La Ronge, SK, by a small lake, Jenni’s earliest memories include visiting trap lines, picking berries and finding ways to cook and bake with ingredients from the boreal forest.
Her first food venture, at age 14, was a burger truck called Flight Delight at the local airport.
In 2005, Jenni opened New Ground Café in the small farming community of Birch Hills, SK, with no formal culinary training. It soon became a local foods “must visit,” with live music, art and a daily changing chalkboard menu.
Jenni moved to Saskatoon in 2012 to start Chef Jenni Cuisine. From weddings to mountain bike races, Jenni travelled the province telling stories about the producers and ingredients featured in her unique and nourishing menus.
In 2019 she was approached by Wanuskewin to create the culinary portion of the Han Wi dinner series, an immersive cultural evening set atop the Opimihaw Valley.
Through her company, Inspired By Nature Culinary Consulting, Jenni continues to honour her heritage and the land by continuing to learn and give back to her community.
Jenni Lessard est une chef métisse, conceptrice de recettes et conseillère en cuisine autochtone au parc patrimonial Wanuskewin. Elle réside dans la vallée Qu’Appelle (Saskatchewan, territoire du Traité no 4), sa source d’inspiration. Élevée en bordure d’un petit lac près de La Ronge (SK), elle se souvient avoir suivi, dès son plus jeune âge, les lignes de piégeage, cueilli de petits fruits et apprêté les ingrédients de la forêt boréale de diverses manières.
À 14 ans, elle démarre une première aventure culinaire : Flight Delight, un camion de hamburgers garé à proximité de l’aéroport local.
En 2005, sans formation culinaire formelle, elle ouvre le New Ground Café dans la petite communauté agricole de Birch Hills (SK). L’établissement devient rapidement un incontournable local avec musique en direct, art et menu quotidien inscrit à l’ardoise.
Lessard déménage à Saskatoon en 2012 et lance Chef Jenni Cuisine. Des mariages aux courses de vélo de montagne, elle sillonne la province en racontant le parcours des producteurs et ingrédients qui figurent dans ses menus originaux et nourrissants.
En 2019, le parc Wanuskewin lui demande de créer la composante gastronomique de la série Han Wi, qui propose des soirées d’immersion culturelle se déroulant dans les hauteurs de la vallée Opimihaw.
Lessard rend toujours hommage à son patrimoine et au terroir par l’entremise de son entreprise Inspired By Nature Culinary Consulting; elle continue à apprendre et à redonner à sa communauté.
Membre du comité directeur de Slow Food Saskatoon, Jenni Lessard est secrétaire de l’Association culinaire autochtone du Canada et vice-présidente de la section locale métisse 126 de cette dernière.
Michael Gauthier has worked in the arts and hospitality industries for 35 years, his experiences having taken him from his native Sudbury to Montreal to the Okanagan Valley to Ottawa. A graduate of the National Theatre School of Canada, Michael wrote children’s theatre for 10 years before embarking on a career as an administrator and entrepreneur. He has been a restaurateur (Le Plateau Bistro, ranked #1 on Trip Advisor for the region of Kelowna), the Executive Director of a French-language cultural centre and, for the National Arts Centre, Restaurant Manager, Guest Service and Events Manager, and now House Manager.
Michael has been published three times in French and once in English. He is thrilled to work in an environment that combines his passion for customer service with his interest in the arts.
Michael Gauthier travaille dans l’événementiel depuis 35 ans, ses expériences l’ayant emmené de son Sudbury d’origine à Montréal, Kelowna et Ottawa. Gradué de l’École nationale de théâtre du Canada, Michael a écrit du théâtre pour enfants pendant 10 ans avant de se lancer dans une carrière d’entrepreneur et d’administrateur. Il a occupé les rôles de propriétaire/sommelier du bistro Le Plateau (coté # 1 par Trip Advisor dans la région de Kelowna), de directeur exécutif du Centre culturel français de l’Okanagan et, pour le Centre national des Arts, de gestionnaire principal au restaurant 1 Elgin, gestionnaire principal des événements et banquets et aujourd’hui Gestionnaire des salles de spectacle.
Ses oeuvres théâtrales ont fait l’objet de trois publications en français et d’une en anglais. Il est ravi de pouvoir évoluer dans un endroit où il peut cultiver sa double passion pour le service à la clientèle et les arts.
